I always thought it was a proxy bride, but someone told me that was if the bride is not at the ceremony at all. I'm just talking about at the rehearsal when the bride sits and watches the wedding party go through the steps of the wedding with a stand in bride... is that for luck or something?...

A proxy bride or groom is a stand-in who has authorization at the actual wedding to say I do. It used to be a standard procedure (like 1800) in arranged marriages but I have never heard of a wedding in the last 50 years that had that. Now there are so many laws about that so I don't even think it's legal to do. As for the rehearsal, I've heard a couple cultures find it to be bad luck for the bride to walk the aisle before her day. It doesn't make any sense to me and I've never known anyone else to have a stand-in for the bride or the groom. Now I have known some that the officiant was not going to be there so they had a friend stand in for him. But not the bride and groom. But yes if you did it would be called a stand-in.

What in the world? I have never heard of this before. Sounds like a "bride understudy " lol. Maybe this is done in a different country or culture?

You could call her a "stand in " I suppose. But I participated in my wedding rehearsal so I don't really know for sure.

I've never heard of this custom before. At wedding rehearsals in the US, the bride walks through her own role, just like everyone else in the wedding. Where did you hear about this? I'm especially confused as to how a couple could be considered married if the bride was not at the ceremony at all.
